Sweet Potato Pancakes

I've had a few request for this recipe so I thought it would be easiest to post it here. It's from the Jessica Seinfeld cookbook: Deceptively Delicious. We have all really enjoyed the few things that we have tried out of it, which says a lot of our little anti-food child. ha ha. I hope your little ones enjoy it as much as J.David (he will eat up to 3 at one sitting!)

1 cup water
1/2 cup sweet potato puree (I use level 2 baby food and it works just the same)
1/4 teaspoon cinnamon or pumpkin pie spice (optional)
1 cup pancake mix
nonstick cooking spray
1 Tablespoon canola or vegetable oil

In large bowl, mix water, puree, and cinnamon/pumpkin pie spice. Add pancake mix and just to combine-the batter should be lumpy.

Coat griddle or skillet with cooking spray and put on med-high heat. When pan is hot, add the oil, and spoon the batter onto the griddle or pan, using a 1/4 cup batter for each pancake.

Cook until bubbles form on top of the pancakes and the batter is set, 2-3 minutes. The use a spatula to flip the pancakes and cook them until golden brown on the other side, 2-3 minutes.

Thanks for posting this! I can't wait to try it out! Lydia will love them! I got that cookbook for Christmas two years ago...and haven't really looked at it too much. I need to pull it out and try some stuff!
